Polynesian Kabobs
Ingredients:
- 1 pound boneless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 cup fresh pineapple chunks
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 teaspoon minced garlic
- Wooden skewers, soaked in water for 30 minutes
Instructions:
To make the marinade, put soy sauce, brown sugar, rice vinegar, sesame oil, ginger, and garlic in a bowl and mix them together
Put the chicken cubes in a plastic bag that can be closed again and again
Then, pour half of the marinade over the chicken
Put the bag closed and put it in the fridge for at least 30 minutes, or better yet, overnight for the best results
Warm up the grill over medium-high heat
Using the wet wooden skewers, alternate the chicken marinated in a spice mix, bell peppers, red onion chunks, and pineapple chunks
Put the kabobs on a grill that has already been heated up
Cook for 10 to 12 minutes, turning them over every so often and basting them with the rest of the marinade, until the chicken is cooked all the way through and the vegetables are soft and slightly charred
If you want, you can serve the Polynesian kabobs hot with chopped cilantro on top
