Spicy Southwest Goulash

Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 1 cup corn kernels
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 cups beef broth
- 1 cup cooked rice
- Fresh cilantro for garnish
- Shredded cheddar cheese for topping
- Sour cream for serving
Instructions:
In a large pot, brown the ground beef over medium-high heat until fully cooked
Add diced onions, minced garlic, and chopped bell pepper
Cook until vegetables are tender
Stir in black beans, kidney beans, diced tomatoes, corn, chili powder, cumin, smoked paprika, salt, and pepper
Pour in beef broth and bring the mixture to a boil
Reduce heat and let it simmer for 20-25 minutes, allowing flavors to meld
