Gluten-Free Pumpkin Spice Muffins

Indulge in the flavors of fall with these gluten-free pumpkin spice muffins. Perfect for Halloween or any autumn gathering, these moist and flavorful treats will delight both kids and adults alike.

Ingredients:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 3 eggs
  • 1 tsp vanilla extract
  • Optional: chopped nuts or chocolate chips for topping

Instructions:

Warm the oven up to 350F 175C and put paper liners in a muffin tin

Mix baking soda, baking powder, salt, pumpkin pie spice, and almond flour in a large bowl using a whisk

Mix the eggs, maple syrup, melted coconut oil, pumpkin puree, and vanilla extract in a different bowl until everything is well mixed

Mix the dry and wet ingredients together until they are just barely mixed

Spread the batter out evenly in the muffin tins

You can top each muffin with chopped nuts or chocolate chips if you want to

Put it in the oven and bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean

Let the muffins cool for 5 minutes in the pan, then move them to a wire rack to cool all the way through
