Cherry Limeade Cupcakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup cherry puree from fresh or frozen cherries
- 1/4 cup freshly squeezed lime juice
- 2 tsp lime zest
- 1/2 cup buttermilk
- 1/2 tsp vanilla extract
- Red food coloring optional
- Cherry and lime slices for garnish
- Cherry frosting store-bought or homemade
- Powdered sugar for dusting optional
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with paper liners
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
Set aside
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Mix in the cherry puree, lime juice, lime zest, and buttermilk
If desired, add a few drops of red food coloring for a deeper red color
Gradually add the dry ingredients mixture to the wet ingredients, mixing until just combined
Do not overmix
Stir in the vanilla extract
Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely
Once the cupcakes are completely cool, frost them with cherry frosting, and garnish each cupcake with a slice of cherry and a slice of lime
If desired, dust the cupcakes with powdered sugar for an extra touch of sweetness
