Old-Fashioned Sour Cream Blueberry Pancakes

These Old-Fashioned Sour Cream Blueberry Pancakes are a tasty take on regular pancakes. Sour cream makes them rich and creamy, and the fresh blueberries make them a great breakfast treat.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Butter or oil for cooking

Instructions:

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt

In a separate bowl, whisk together the sour cream, milk, eggs, and vanilla extract until well combined

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; a few lumps are okay

Gently fold in the fresh blueberries into the batter

Heat a skillet or griddle over medium heat and add a small amount of butter or oil to prevent sticking

Pour 1/4 cup portions of the pancake batter onto the skillet for each pancake

Cook until bubbles form on the surface, then flip and cook until golden brown on both sides

Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed

Serve the pancakes warm with maple syrup or your favorite toppings
