Cheddar Buttermilk Stuffed Potato Boats

These Cheddar Buttermilk Stuffed Potato Boats are a comforting and delicious side dish or snack. Crisp potato skins filled with creamy mashed potatoes flavored with tangy buttermilk and sharp cheddar cheese make for an irresistible treat.

Ingredients:

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup buttermilk
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Chopped chives for garnish optional

Instructions:

Preheat the oven to 400F 200C

Scrub the potatoes clean and pat them dry with paper towels

Using a fork, prick each potato several times on all sides

Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork

Remove the potatoes from the oven and let them cool slightly

Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato attached to the skin

In a mixing bowl, mash the potato flesh with buttermilk, butter, salt, and pepper until smooth

Stir in shredded cheddar cheese until well combined

Fill each potato skin with the mashed potato mixture, mounding it slightly

Place the stuffed potato boats on a baking sheet lined with parchment paper

Bake in the preheated oven for another 10-15 minutes, or until the cheese is melted and bubbly

Garnish with chopped chives if desired before serving
