Paleo Beef Short Ribs

These Paleo beef short ribs are a savory and hearty dish thats perfect for a Paleo diet. Theyre slow-cooked to perfection, resulting in tender and flavorful meat that falls off the bone. The combination of herbs, tomatoes, and beef broth creates a rich and satisfying flavor profile without any grains or dairy.

Ingredients:

  • 4 lbs beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup diced tomatoes canned or fresh
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste

Instructions:

Set the oven temperature to 325F 160C

Add salt and pepper to the beef short ribs for seasoning

Heat the olive oil in a large ovenproof pot or Dutch oven over medium-high heat

When the beef short ribs are added, sear them until browned on all sides

Take out and place aside

Add the chopped garlic and onion to the same pot

Saut them until they release their fragrance and turn translucent

Put the seared short ribs of beef back in the pot

Add the diced tomatoes and beef broth

Add the dried rosemary and thyme

Put the pot in the oven that has been preheated and cover it

The short ribs should be braised for 2

5 to 3 hours, or until the meat is falling off the bones

When its finished, take the pot out of the oven and give it some time to rest before serving

If desired, top the hot Paleo beef short ribs with fresh herbs
