Green Cupcakes

These delightful green cupcakes are perfect for St. Patricks Day or any occasion where you want a touch of green sweetness. The spinach puree adds a natural green hue while keeping the cupcakes moist and flavorful.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • Green food coloring
  • 1/4 cup spinach puree for natural green color
  • 1/2 cup powdered sugar for frosting
  • 1 tbsp milk for frosting
  • Sprinkles or decorations of your choice optional

Instructions:

Preheat your oven to 350F 175C

Line a cupcake tin with paper liners

In a bowl, whisk together the flour, baking powder, and salt

In another bowl, cream together the softened butter and granulated sugar until light and fluffy

Add the eggs, one at a time, beating well after each addition

Stir in the vanilla extract

Combine the milk and spinach puree in a blender until smooth

This will give your cupcakes a natural green color

Add green food coloring if needed to achieve the desired shade of green

Gradually add the dry ingredients to the wet mixture, alternating with the green milk mixture, beginning and ending with the dry ingredients

Mix until just combined

Divide the batter evenly among the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely

In a small bowl, mix together the powdered sugar and milk to make a simple glaze for the frosting

Once the cupcakes are completely cool, drizzle the glaze over the top of each cupcake

Add sprinkles or decorations if desired
