Amazing Vegan Gluten-Free Quinoa Salad
This Amazing Vegan Gluten-Free Quinoa Salad is full of healthy fats, fresh vegetables, and bright flavors. Its great as a light lunch, a side dish, or a way to prepare meals ahead of time.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup roasted sunflower seeds
- Juice of 2 lemons
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions:
Bring water to a boil in a medium-sized pot
To make the quinoa fluffy, add it to the pot and turn down the heat to low
Cover and let it simmer for 15 minutes
Moving the cooked quinoa to a big bowl will help it cool down to room temperature
In the same bowl as the quinoa, add the red onion, parsley, mint, sunflower seeds, and cherry tomatoes
To make the dressing, mix lemon juice, olive oil, salt, and pepper in a small bowl with a whisk
Pour the dressing over the quinoa salad and toss it around until everything is well mixed and covered
Check the seasoning and make changes if needed
Let it sit at room temperature or in the fridge
