Sweet Potato Toast Vegan and Gluten-Free
Ingredients:
- 2 medium sweet potatoes, washed and sliced into 1/4-inch thick rounds
- 2 tablespoons olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- Red pepper flakes optional, for extra spice
Instructions:
Preheat your oven to 400F 200C
In a bowl, combine olive oil, paprika, garlic powder, onion powder, salt, and pepper
Brush both sides of sweet potato rounds with the olive oil mixture and place them on a baking sheet lined with parchment paper
Bake in the preheated oven for about 15-20 minutes, flipping halfway through, or until the sweet potato rounds are tender and slightly crispy
While the sweet potatoes are baking, prepare the avocado salsa
In a bowl, combine sliced avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper
Add red pepper flakes if you desire some heat
Once the sweet potato rounds are done, remove them from the oven and let them cool slightly
Top each sweet potato round with a spoonful of the avocado salsa
Serve your sweet potato toast vegan and gluten-free as a delicious and healthy snack or breakfast option
