Strawberry Lemon Elderflower Ice Cream

Indulge in the delicate flavors of strawberry, lemon, and elderflower with this refreshing ice cream recipe inspired by Izy Hossacks Strawberry, Lemon, and Elderflower Cake.

Ingredients:

  • 2 cups fresh strawberries, hulled and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 cup elderflower cordial
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • Pinch of salt

Instructions:

In a blender, combine the chopped strawberries, lemon juice, and lemon zest

Blend until smooth

In a large bowl, whisk together the elderflower cordial, heavy cream, milk, sugar, and salt until the sugar has dissolved

Stir the strawberry mixture into the cream mixture until well combined

Pour the mixture into an ice cream maker and churn according to the manufacturers instructions

Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours or until firm

Serve scoops of the ice cream in bowls or cones, and enjoy
