Smashed Berry-Lime-Coconut Yogurt Ice Pops

These Smashed Berry-Lime-Coconut Yogurt Ice Pops are a refreshing and healthy treat perfect for hot summer days. The combination of tangy berries, zesty lime, and creamy coconut yogurt creates a deliciously satisfying popsicle.

Ingredients:

  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 cup coconut yogurt
  • 1/4 cup coconut milk

Instructions:

In a bowl, smash the mixed berries with a fork or blend them slightly

Add lime juice and honey or maple syrup to the smashed berries and mix well

In another bowl, mix coconut yogurt and coconut milk until smooth

Layer the berry mixture and coconut yogurt mixture alternately into ice pop molds

Insert ice pop sticks into the molds and freeze for at least 4 hours or until solid

Once frozen, remove from molds and enjoy
