Protein Pancakes or Waffles
Ingredients:
- 1 cup oat flour
- 1/2 cup vanilla protein powder
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 cup unsweetened almond milk
- 1/4 cup plain Greek yogurt
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp honey
- Cooking spray or oil for waffle iron
Instructions:
In a large mixing bowl, combine the oat flour, protein powder, baking powder, cinnamon, and salt
In a separate bowl, whisk together the almond milk, Greek yogurt, egg, vanilla extract, and honey until well combined
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; its okay if there are a few lumps
Preheat your waffle iron and lightly grease it with cooking spray or oil
Pour the pancake or waffle batter onto the preheated waffle iron, using the manufacturers instructions for your specific appliance
Close the waffle iron and cook until the pancakes or waffles are golden brown and crisp, usually 3-5 minutes depending on your waffle iron
