Low Carb Zucchini Fritters
These zucchini fritters are a tasty and filling keto-friendly snack or side dish that dont have many carbs. They are tasty because of the Parmesan cheese and seasonings that give them a crispy outside and a soft inside.
Ingredients:
- 2 medium zucchinis, grated
- 2 eggs
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
Instructions:
Grate the zucchini and mix it with the eggs, almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper in a large bowl
Set a pan on medium heat and add the olive oil
Put about 1/4 cup of the zucchini mixture into the pan and use a spatula to make it a little flatter
Turn the food over three to four times, or until its golden brown and crispy
Place the fritters on a plate with paper towels on it to soak up any extra oil
Add more olive oil to the pan as needed and do it again with the rest of the zucchini mixture
Enjoy while still warm
