Gluten-Free Chicken & Cream Cheese Taquitos
These gluten-free chicken and cream cheese taquitos are crispy on the outside, creamy on the inside, and packed with delicious flavors. Perfect for a quick and easy appetizer or snack
Ingredients:
- 2 cups cooked shredded chicken
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup salsa verde
- 1/4 cup chopped cilantro
- 12 gluten-free corn tortillas
- Salt and pepper to taste
- Oil for frying
Instructions:
In a mixing bowl, combine shredded chicken, softened cream cheese, shredded cheddar cheese, salsa verde, chopped cilantro, salt, and pepper
Mix until well combined
Warm the corn tortillas in a microwave for about 30 seconds to make them pliable
Place a spoonful of the chicken mixture onto each tortilla and roll tightly into a taquito shape
In a skillet, heat oil over medium-high heat
Carefully place the rolled taquitos seam-side down in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side
Remove taquitos from the skillet and place them on a paper towel-lined plate to drain excess oil
Serve hot with your favorite dipping sauce or guacamole
